Michael's Favorite Tomato Salad

1 vine-on tomato, thinly sliced
1 teaspoon extra virgin olive oil
1 teaspoon balsamic vinegar
coarse sea salt
black pepper to taste
1 cup arugula
1/4 cup warm tomato vinaigrette
  • Fan sliced tomato across a serving plate.
  • Drizzle with olive oil and balsamic vinegar, season with coarse sea salt and a few twists of the pepper mill.
  • Toss Arugula with vinaigrette, and place over sliced tomatoes.
